- 4 boneless chicken breasts
- 1 cup salsa verde
- 1 cup shredded pepper jack cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Preheat grill to medium-high heat.
- Brush chicken breasts with olive oil, season with salt and pepper.
- Grill chicken for 6-8 minutes per side until cooked through.
- During the last few minutes, top with salsa verde and sprinkle with pepper jack cheese.
- Close grill to melt cheese, about 2-3 minutes.
- Remove from grill, garnish with cilantro and serve with lime wedges.
Notes
- For extra flavor, marinate chicken in salsa verde for 30 minutes prior to grilling.
