  • Total Time: 35 minutes
  • Yield: about 30 fish-shaped crackers

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup grated Parmesan cheese KitchenAid Classic Iconic Stand Mixer
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional for extra flavor)
  • 1/4 cup unsalted butter, cold and cut into small pieces
  • 1/4 cup cold water
  • 1 egg (for egg wash)
  • Sesame seeds or poppy seeds for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the flour, Parmesan cheese, baking powder, salt, pepper, and smoked paprika.
  3. Add the cold butter to the dry ingredients. Using a stand mixer or your fingers, cut the butter into the mixture until it resembles coarse crumbs.
  4. Gradually add cold water, mixing until the dough comes together. Knead gently into a ball, then wrap in plastic wrap and chill for 20 minutes.
  5. On a lightly floured surface, roll out the dough to about 1/8 inch thickness.
  6. Use a fish-shaped cookie cutter to cut out the crackers. Place them on the prepared baking sheet.
  7. Mix the egg with a tablespoon of water to create an egg wash. Brush the tops of the crackers with this mixture.
  8. If desired, sprinkle sesame or poppy seeds for added flavor and texture.
  9. Bake for 12-15 minutes or until golden brown and crispy.
  10. Allow to cool before serving. For an extra crunch, replicate Phoebe’s quirky style with fun shapes!

Notes

  • Store these crackers in an airtight container at room temperature for up to a week.

  • You can add herbs like dill or parsley for extra flavor.
