- 1/4 cup unsalted butter, cold and cut into small pieces
- 1/4 cup cold water
- 1 egg (for egg wash)
- Sesame seeds or poppy seeds for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the flour, Parmesan cheese, baking powder, salt, pepper, and smoked paprika.
- Add the cold butter to the dry ingredients. Using a stand mixer or your fingers, cut the butter into the mixture until it resembles coarse crumbs.
- Gradually add cold water, mixing until the dough comes together. Knead gently into a ball, then wrap in plastic wrap and chill for 20 minutes.
- On a lightly floured surface, roll out the dough to about 1/8 inch thickness.
- Use a fish-shaped cookie cutter to cut out the crackers. Place them on the prepared baking sheet.
- Mix the egg with a tablespoon of water to create an egg wash. Brush the tops of the crackers with this mixture.
- If desired, sprinkle sesame or poppy seeds for added flavor and texture.
- Bake for 12-15 minutes or until golden brown and crispy.
