- 1 lb beef stew meat, cubed
- 2 carrots, diced
- 2 parsnips, diced
- 1 onion, chopped
- 3 garlic cloves, minced
- 4 cups beef broth
- 1 cup frozen peas
- 2 tablespoons olive oil
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Brown the beef cubes until seared on all sides.
- Add chopped onion and minced garlic, sauté until fragrant and translucent.
- Stir in carrots, parsnips, thyme, salt, and pepper. Cook for 5 minutes.
- Pour in beef broth, bring to a boil, then reduce heat to low and simmer for 1 hour or until meat is tender.
- Add frozen peas in the last 10 minutes of cooking. Serve hot with bread or over mashed potatoes.
