- For the Hearty Stew:
- 1 pound beef stew meat, cubed
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 carrots, sliced
- 2 potatoes, diced
- 4 cups beef broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- In a large bowl, combine warm water, sugar, and yeast. Let sit for 10 minutes until foamy.
- In another bowl, mix flour and salt. Gradually add the yeast mixture to the flour, stirring until a dough forms.
- Turn the dough onto a floured surface and knead for 5-7 minutes until smooth. Divide into two portions and shape into round loaves. Place on a baking sheet lined with parchment paper.
- In a large pot, heat olive oil over medium heat. Add the beef, browning on all sides. Then add onions, carrots, and potatoes, sautéing for 5 minutes.
- Pour in beef broth, thyme, salt, and pepper. Allow to simmer for about 45 minutes, or until the meat is tender.
- Preheat oven to 375°F (190°C). Bake the loaves for 25-30 minutes or until golden brown.
- To serve, slice the hard bread and ladle the stew into bowls. Enjoy!
