- 1 lb boneless, skinless chicken thighs, diced
- 1 cup mixed vegetables (carrots, peas, potatoes)
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 2 tablespoons all-purpose flour
- 1 package pre-made puff pastry or pie crust
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh thyme or rosemary (optional for added flavor)
Instructions
- Heat 2 tablespoons of Ninja Air Fryer Pro Crisp & Roast or a regular skillet with olive oil over medium heat.
- Add diced chicken, onion, and garlic, cooking until chicken is browned and onions are translucent.
- Stir in the mixed vegetables and cook for another 5 minutes.
- Sprinkle with flour to thicken the mixture, then gradually pour in chicken broth and heavy cream, stirring constantly.
- Season with salt, pepper, and herbs. Simmer until the sauce thickens to a creamy consistency.
- Preheat your oven to 400°F (200°C).
- Roll out the pre-made puff pastry or pie crust on a floured surface.
- Pour the filling into a pie dish and cover with the pastry, sealing the edges.
- Cut slits on top to allow steam to escape.
- Bake in the preheated oven for about 25-30 minutes or until the crust turns golden brown.

Notes
- Allow the chicken pot pie to cool slightly before serving to avoid burns from hot filling.
- Use store-bought puff pastry for convenience, or make your own for a homemade touch.
- For extra flavor, add herbs like thyme or rosemary to the filling.
