Ingredients

  • 1 kg fresh plums, halved and pitted
  • 1 cup water
  • 1/2 cup honey (or maple syrup for a vegan option)
  • 1/4 cup brown sugar
  • 2 cinnamon sticks
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • Juice of 1 lemon
  • Zest of 1 orange

Instructions

  1. Wash and halve the plums, removing the pits.
  2. In a large saucepan, combine water, honey or maple syrup, brown sugar, cinnamon sticks, ground ginger, ground cloves, ground nutmeg, lemon juice, and orange zest. Bring to a simmer over medium heat.
  3. Arrange the halved plums in a baking dish, cut-side up, and pour the spiced syrup evenly over them.
  4. Preheat the oven to 350ยฐF (175ยฐC). Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 15-20 minutes until tender.

Notes

  • Choose ripe but firm plums to avoid over-softening during baking.
  • Adjust the spices based on your taste; add more ginger or cloves if desired.
  • Add a splash of red wine or brandy to the syrup for added flavor.
  • Enjoy warm with cream, or chilled as a compote.
