- 1 kg fresh plums, halved and pitted
- 1 cup water
- 1/2 cup honey (or maple syrup for a vegan option)
- 1/4 cup brown sugar
- 2 cinnamon sticks
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- Juice of 1 lemon
- Zest of 1 orange
Instructions
- Wash and halve the plums, removing the pits.
- In a large saucepan, combine water, honey or maple syrup, brown sugar, cinnamon sticks, ground ginger, ground cloves, ground nutmeg, lemon juice, and orange zest. Bring to a simmer over medium heat.
- Arrange the halved plums in a baking dish, cut-side up, and pour the spiced syrup evenly over them.
- Preheat the oven to 350ยฐF (175ยฐC). Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 15-20 minutes until tender.
Notes
- Choose ripe but firm plums to avoid over-softening during baking.
- Adjust the spices based on your taste; add more ginger or cloves if desired.
- Add a splash of red wine or brandy to the syrup for added flavor.
- Enjoy warm with cream, or chilled as a compote.
