  • 1 kg fresh plums, halved and pitted
  • 1 cup water
  • 1/2 cup honey (or maple syrup for a vegan option)
  • 1/4 cup brown sugar
  • 2 cinnamon sticks
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • Juice of 1 lemon
  • Zest of 1 orange

Instructions

  1. Wash and halve the plums, removing the pits.
  2. In a large saucepan, combine water, honey or maple syrup, brown sugar, cinnamon sticks, ground ginger, ground cloves, ground nutmeg, lemon juice, and orange zest. Bring to a simmer over medium heat.
  3. Arrange the halved plums in a baking dish, cut-side up, and pour the spiced syrup evenly over them.
  4. Preheat the oven to 350°F (175°C). Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 15-20 minutes until tender.

Notes

  • Choose ripe but firm plums to avoid over-softening during baking.
  • Adjust the spices based on your taste; add more ginger or cloves if desired.
  • Add a splash of red wine or brandy to the syrup for added flavor.
