  • 150g powdered sugar
  • 1 tablespoon lemon juice
  • 200g all-purpose flour
  • 100g cold unsalted butter, cubed
  • 50g granulated sugar
  • 1 large egg
  • Pinch of salt
  • Optional: a sprinkle of crushed nuts or mint for garnish

Instructions

  1. Mix 200g of plain flour with a pinch of salt in a large bowl. Add the cold, cubed butter and blend until the mixture resembles coarse crumbs. Stir in 50g of granulated sugar and then add the beaten egg. Knead gently to form a smooth dough. Wrap in plastic wrap and chill for about 30 minutes.
  2. Wash and prepare the berries. In a bowl, combine the berries with 150g of powdered sugar and a tablespoon of lemon juice. Let sit for 10-15 minutes to develop flavors and juices.
  3. Remove the chilled dough. Roll it out on a floured surface until about 1/4 inch thick. Transfer to a tart pan, pressing gently to fit. Trim excess dough.
  4. Preheat oven to 180°C (350°F). Line the crust with parchment paper and add baking weights or dried beans. Bake for 15 minutes, remove weights, then bake for another 10 minutes until golden. Cool the crust.
  5. Pour the berry mixture into the cooled tart shell. Chill in the refrigerator for at least 1 hour. Garnish with crushed nuts or mint if desired.
