- 1 lb chicken breast, diced
- 2 cups mixed fresh vegetables (bell peppers, broccoli, carrots)
- 2 cups jasmine rice
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 garlic cloves, minced
- 1-inch fresh ginger, grated
- Salt and pepper to taste

Instructions
- Prepare the fresh ingredients by washing and chopping the vegetables.
- Heat sesame oil in a large skillet or wok. Add garlic and ginger, stir-fry for 30 seconds, then add chicken and cook until browned. Add mixed vegetables and soy sauce, stir until cooked.
- Rinse jasmine rice under cold water, then add to boiling water and simmer until fluffy.
- Assemble by filling takeout boxes with jasmine rice topped with stir-fried chicken and vegetables.
