- 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 cups broccoli florets
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1/4 cup soy sauce
- 2 tablespoons cornstarch
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 1/2 teaspoon red pepper flakes (optional)
- Cooked jasmine rice, for serving
- Sesame seeds, for garnish
Instructions
- In a bowl, combine the chicken pieces with 2 tablespoons of soy sauce and 1 tablespoon of cornstarch. Mix well and let it marinate for at least 15 minutes.
- Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until cooked through. Remove the chicken and set aside.
- Add the sliced bell peppers, onion, and broccoli to the skillet. Stir-fry for about 5-7 minutes, add minced garlic and grated ginger, and stir-fry until fragrant.
- In a small bowl, whisk together the remaining soy sauce, cornstarch, rice vinegar, honey, and red pepper flakes. Pour the sauce over the vegetables and bring to a simmer. Add the chicken back to the skillet and toss to coat.
- Serve the Chinese takeout over cooked jasmine rice and garnish with sesame seeds. Enjoy your Stars Hollow-inspired feast!
