  • 1 inch ginger, grated
  • 1/4 cup soy sauce
  • 2 tablespoons cornstarch
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1/2 teaspoon red pepper flakes (optional)
  • Cooked jasmine rice, for serving
  • Sesame seeds, for garnish

Instructions

  1. In a bowl, combine the chicken pieces with 2 tablespoons of soy sauce and 1 tablespoon of cornstarch. Mix well and let it marinate for at least 15 minutes.
  2. Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until cooked through. Remove the chicken and set aside.
  3. Add the sliced bell peppers, onion, and broccoli to the skillet. Stir-fry for about 5-7 minutes, add minced garlic and grated ginger, and stir-fry until fragrant.
  4. In a small bowl, whisk together the remaining soy sauce, cornstarch, rice vinegar, honey, and red pepper flakes. Pour the sauce over the vegetables and bring to a simmer. Add the chicken back to the skillet and toss to coat.
