Instructions
- In a large mixing bowl, combine sliced peaches, sugar, lemon juice, vanilla extract, cinnamon, and nutmeg. Gently toss to coat evenly.
- Transfer the peach mixture into a buttered baking dish, spreading it out evenly.
- In a separate bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to cut in the butter until the mixture resembles coarse crumbs.
- Pour in the buttermilk and stir just until combined. Do not overmix.
- Drop spoonfuls of the crust mixture over the peach filling, covering it as evenly as possible.
- Bake in a preheated oven at 375°F (190°C) for about 40-45 minutes until the crust is golden brown and bubbling.
- Allow to cool slightly before serving for the ultimate peach cobbler experience.
Notes
- For an extra crunch, sprinkle chopped pecans on top before baking.
- You can substitute fresh peaches with frozen, just thaw and drain excess liquid.
