Instructions
- Start by combining minced garlic, fresh thyme, chopped rosemary, salt, black pepper, and olive oil in a small bowl to create the lemon herb marinade.
- Remove any giblets from the chicken and pat it dry. Rub the marinade all over the chicken, ensuring even coverage inside and out. Stuff the cavity with quartered lemons and additional herbs.
- Preheat your oven to 425°F (220°C). Place the chicken on a roasting pan. Roast for 20 minutes, then reduce heat to 375°F (190°C) and continue roasting for 40-50 minutes until the internal temperature reaches 165°F (74°C) and juices run clear.
- Let the chicken rest for 10 minutes before carving. Garnish with extra herbs and lemon slices. Serve with your favorite sides for a movie-inspired dining experience.
