- 2–3 tablespoons ice water
- 1 cup fresh mixed berries (strawberries, blueberries, raspberries)
- 2 tablespoons honey or berry glaze
- 1 tablespoon lemon juice
- Optional: fresh mint leaves for garnish
Instructions
- Combine the all-purpose flour and powdered sugar in a large mixing bowl. Whisk together to blend evenly.
- Add the cold, cubed butter to the flour mixture. Use a pastry cutter or fingertips to cut in the butter until the mixture resembles coarse crumbs.
- Pulse in the egg yolk and gradually add ice water, mixing gently just until the dough begins to come together.
- Form the dough into a disk, wrap with plastic wrap, and refrigerate for at least 30 minutes.
- Preheat the oven to 350°F (175°C). Roll out the chilled dough on a floured surface into a 12-inch circle. Fit into a 9-inch tart pan, trimming excess dough.
- Prick the crust with a fork, line with parchment paper, and fill with pie weights or dried beans. Bake for 15 minutes, then remove weights and parchment, and bake for an additional 10 minutes until golden.
- While the crust cools, toss the fresh berries with honey or berry glaze and lemon juice.
- Arrange the berries in the cooled tart shell artistically. Drizzle with additional honey or glaze and garnish with mint leaves if desired.
