  • 23 tablespoons ice water

  • 2 tablespoons honey or berry glaze
  • 1 tablespoon lemon juice
  • Optional: fresh mint leaves for garnish

Instructions

  1. Combine the all-purpose flour and powdered sugar in a large mixing bowl. Whisk together to blend evenly.
  2. Add the cold, cubed butter to the flour mixture. Use a pastry cutter or fingertips to cut in the butter until the mixture resembles coarse crumbs.
  3. Pulse in the egg yolk and gradually add ice water, mixing gently just until the dough begins to come together.
  4. Form the dough into a disk, wrap with plastic wrap, and refrigerate for at least 30 minutes.
  5. Preheat the oven to 350°F (175°C). Roll out the chilled dough on a floured surface into a 12-inch circle. Fit into a 9-inch tart pan, trimming excess dough.
  6. Prick the crust with a fork, line with parchment paper, and fill with pie weights or dried beans. Bake for 15 minutes, then remove weights and parchment, and bake for an additional 10 minutes until golden.
  7. While the crust cools, toss the fresh berries with honey or berry glaze and lemon juice.
  8. Arrange the berries in the cooled tart shell artistically. Drizzle with additional honey or glaze and garnish with mint leaves if desired.
