- 2 cups granulated sugar
- 2/3 cup light corn syrup
- 1/2 cup water
- 1/4 teaspoon cream of tartar
- 1/2 teaspoon lemon extract
- Yellow food coloring (optional)
- Cowtail or lollipop sticks
- Powdered sugar (for coating)
Instructions
- Combine the sugar, corn syrup, water, and cream of tartar in a heavy-bottomed saucepan. Stir over medium heat until the sugar dissolves completely.
- Attach a candy thermometer and bring the mixture to 300°F (hard crack stage) without stirring.
- Remove from heat. Stir in lemon extract and yellow food coloring until well combined.
- Pour the hot mixture onto a silicone mat or greased marble slab. Let it cool briefly until pliable.
- Cut into small squares with a silicone spatula or buttered scissors. Insert lollipop sticks into each piece immediately.
- Allow candies to cool and harden at room temperature. Optionally, roll in powdered sugar or dip in chocolate for extra flair.
Notes
- Work quickly when cutting and inserting sticks as the candy hardens rapidly.
- Store in an airtight container at room temperature for up to two weeks.
- Keep away from moisture to prevent candies from becoming sticky.
