  • ⅓ cup fresh lemon zest
  • ½ cup powdered sugar (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper and lightly grease.
  2. For crust: Beat butter and ½ cup sugar until light and fluffy. Add egg yolk and vanilla; mix well. Stir in flour and salt until dough forms. Press evenly into pan.
  3. Bake crust 20–22 minutes until golden. Cool slightly.
  4. For filling: Whisk eggs, 1½ cups sugar, flour, baking powder, and lemon zest. Add lemon juice; mix well. Pour over warm crust.
  5. Bake 25–30 minutes until filling is set and golden. Cool completely in pan on wire rack.
  6. Dust generously with powdered sugar before slicing into squares. Serve chilled or at room temperature.
