- 1 cup (2 sticks) unsalted butter, softened
- ½ cup granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1½ cups all-purpose flour

- 2 large eggs
- 1 cup fresh lemon juice (about 4–5 lemons)
- 1½ cups granulated sugar (for filling)
- ½ cup all-purpose flour (for filling)
- ¼ teaspoon baking powder
- ⅓ cup fresh lemon zest
- ½ cup powdered sugar (for dusting)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper and lightly grease.
- For crust: Beat butter and ½ cup sugar until light and fluffy. Add egg yolk and vanilla; mix well. Stir in flour and salt until dough forms. Press evenly into pan.
- Bake crust 20–22 minutes until golden. Cool slightly.
- For filling: Whisk eggs, 1½ cups sugar, flour, baking powder, and lemon zest. Add lemon juice; mix well. Pour over warm crust.
- Bake 25–30 minutes until filling is set and golden. Cool completely in pan on wire rack.
- Dust generously with powdered sugar before slicing into squares. Serve chilled or at room temperature.
Notes
- For ‘Felix Felicis’ shimmer, lightly brush glaze with edible gold dust or mix a pinch of edible gold flakes into powdered sugar.
- Use Meyer lemons for a sweeter, floral twist.
- Cool completely before cutting for clean slices.
