Ingredients

- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 egg
- Salt and pepper to taste
- 4 sub rolls
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
Instructions
- Chop garlic and onions finely.
- Mix together ground beef, breadcrumbs, Parmesan cheese, parsley, garlic, onion, egg, salt and pepper in a bowl.
- Shape the mixture into 1-inch meatballs.
- Heat marinara sauce in a saucepan and add meatballs, simmer for 20 minutes.
- Assemble subs by placing meatballs in sliced sub rolls, topping with sauce and mozzarella cheese, then broil until bubbly.
Notes
- Leftovers can be stored in the refrigerator for up to 3 days.
- Meatballs can be made ahead of time and stored.
- Substitute ground turkey or plant-based meat for variations.
