Instructions
- Preheat oven to 375°F (190°C).
- Mix pumpkin puree, brown sugar, cinnamon, nutmeg, ginger, and salt in a bowl until well combined.
- Roll out pastry dough and cut into circles using a cookie cutter or a glass.
- Place a spoonful of pumpkin filling on one half of each circle.
- Fold the dough over to enclose the filling and seal the edges by crimping with a fork.
- Brush the tops with beaten egg for a golden finish.
- Bake on a parchment-lined baking sheet for 20-25 minutes until golden brown.
