- 1 cup golden syrup
- 3/4 cup fresh breadcrumbs
- 1 teaspoon grated lemon zest
- 2 tablespoons lemon juice
- 1 egg (for glazing)
Instructions
- Mix flour, sugar, and salt in a bowl. Cut in cold butter until mixture resembles coarse crumbs.
- Add beaten egg and cold water, mix until dough forms. Wrap in plastic and chill for 30 minutes.
- Preheat oven to 350°F (175°C). Roll out dough and fit into a tart pan. Prick base with a fork.
- Spread breadcrumbs evenly over the base, then pour in golden syrup mixed with lemon zest and juice.
- Bake for 30-35 minutes until golden and set. Brush with beaten egg halfway through baking for a shiny glaze.

- Chill the dough thoroughly for a flaky crust.
- Use fresh breadcrumbs for best texture.
- Serve warm with a dusting of powdered sugar or a dollop of cream for added indulgence.
