- 1 ¾ cups all-purpose flour
- ½ cup unsalted butter, chilled and diced
- 1/4 cup granulated sugar
- 1 egg yolk
- 3–4 tablespoons cold water
- 1 cup golden syrup
- 1/2 cup fresh breadcrumbs
- 1 lemon, zested and juiced
- 1 egg, beaten
- Clotted cream for serving (optional)
Instructions
- Combine flour and sugar in a bowl, add butter, and rub until crumbly. Stir in egg yolk and gradually add cold water until a dough forms. Chill for 30 minutes.
- Roll out the chilled dough on a floured surface to fit a 9-inch tart pan. Place in the pan, trim the edges, and prick the bottom with a fork. Refrigerate.
- Heat the golden syrup in a saucepan until runny. Remove from heat and stir in breadcrumbs, lemon zest, juice, and beaten egg. Pour the mixture into the crust.
- Bake in a preheated oven at 350°F (175°C) for 30-35 minutes until golden. Cool on a wire rack before serving.
Notes
- Store in an airtight container in the fridge for up to a week.
- For freezing, wrap tightly and freeze for up to 3 months. Thaw in the fridge before serving.
- Serve with clotted cream or vanilla ice cream for a magical experience.
