Instructions
- Heat oil in a large pot over medium heat. Add onions and cook until translucent.
- Add garlic, ginger, curry powder, and paprika; cook for 1 minute until fragrant.
- Stir in chicken pieces and cook until browned.
- Add chopped tomatoes, carrots, and bell pepper; cook for 5 minutes.
- Pour in coconut milk, season with salt and pepper, and simmer for 20 minutes until flavors meld.
- Garnish with fresh cilantro before serving.
