- 2 cups cooked chicken breast, shredded
- 4 cups fresh broccoli florets
- 1 cup Greek yogurt
- 1/2 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 cup cooked rice or quinoa
- 2 cloves garlic, minced
- 1 tsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil and sauté garlic until fragrant.
- Combine cooked chicken, broccoli, cooked rice, garlic mixture, Greek yogurt, and cheeses in a mixing bowl. Season with salt and pepper.
- Transfer mixture to a greased baking dish and top with extra cheese if desired.
- Bake for 25-30 minutes until bubbly and golden on top.
Notes
- Feel free to add sliced mushrooms or diced bell peppers for extra flavor.
- To make it gluten-free, use gluten-free rice or quinoa.
