Instructions
- Blend oats until fine to create oat flour.
- Add banana, eggs, Greek yogurt, baking powder, and vanilla to the blender. Blend until smooth.
- Heat a non-stick skillet over medium heat and lightly grease.
- Pour batter to form pancakes and cook until golden brown on both sides.
- Serve topped with fresh berries and a drizzle of maple syrup.
