- 1 cup dried lentils
- 2 large potatoes, diced
- 1 onion, chopped
- 2 carrots, chopped
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 2 tbsp olive oil
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté onion, carrots, and garlic until fragrant and softened.
- Add diced potatoes and lentils, stir well.
- Pour in vegetable broth, add thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer until lentils and potatoes are tender, about 30 minutes.
- Adjust seasoning as needed and serve hot.

- You can add chopped celery or spinach for extra flavor and nutrition.
