- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1/2 cup sour cream
- 1/4 cup heavy cream
- 1/4 cup caramel sauce
- 1 teaspoon vanilla extract
- 1/4 teaspoon butterbeer flavoring (or butterscotch essence)
Instructions
- Preheat oven to 325°F (160°C). Combine graham cracker crumbs, sugar, and melted butter; press into the bottom of a springform pan. Bake for 10 minutes.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then sour cream, heavy cream, vanilla, and butterbeer flavoring. Mix until well combined.
- Pour batter over the crust. Swirl in caramel sauce gently using a knife.
- Bake for 55-60 minutes, until the edges are set but the center slightly jiggles.
- Cool completely, then refrigerate for at least 4 hours or overnight. Decorate with whipped cream and house sprinkles before serving.

- Ensure cream cheese is softened for smooth mixing.
- Swirl caramel just before baking for a marbled effect.
- Chill thoroughly to set the cheesecake.
