- 1 cup all-purpose flour
- 1/2 cup unsalted butter (softened)
- 1/4 cup granulated sugar (for crust)
- 1/4 teaspoon salt
- 1 cup granulated sugar (for filling)
- 2 large eggs
- 1/2 cup freshly squeezed lemon juice (about 2–3 lemons)
- 1 teaspoon lemon zest
- Powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine flour, 1/4 cup sugar, and salt.
- Add softened butter and mix until a dough forms.
- Press the dough into a greased 8×8 inch baking dish.
- Bake crust for 15 minutes until slightly golden.
- In a separate bowl, whisk together 1 cup sugar, eggs, lemon juice, and lemon zest until smooth.
- Pour the lemon filling over the warm crust.
- Return to the oven and bake for another 20-25 minutes until the filling is set.
- Let cool to room temperature, then refrigerate for at least 2 hours.
- Dust with powdered sugar, cut into squares, and serve.
Notes
- Store in an airtight container in the refrigerator for up to a week.
- Best served chilled with herbal tea for an afternoon snack.
- Can be frozen for up to three months.
