- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 3 (8 oz) packages cream cheese
- 1 cup sugar
- 3/4 cup sour cream
- 1/2 cup butterscotch syrup
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/2 cup honey
- 1/4 cup heavy cream
- 1/4 teaspoon salt
Instructions
- Preheat oven to 325°F (160°C). Mix graham cracker crumbs with melted butter and press into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese and sugar until smooth. Add sour cream, butterscotch syrup, and vanilla; mix well.
- Beat in eggs one at a time. Pour the batter over the crust.
- Bake for 55-60 minutes until set. Cool completely in the pan.
- In a small saucepan, heat honey, heavy cream, and salt until combined. Drizzle over cooled cheesecake and refrigerate for at least 4 hours.
- Top with butterbeer foam or whipped cream before serving for added magic.
