Instructions
- Combine flour, powdered sugar, and salt in a bowl. Cut in cold butter until mixture resembles coarse crumbs.
- Add egg yolk and ice water; mix until dough forms. Flatten into a disc, wrap in plastic, and chill for 30 minutes.
- Preheat oven to 375°F (190°C). Roll out dough on a floured surface and fit into a tart pan. Prick with a fork and bake for 20-25 minutes until golden.
- Arrange sliced fruits on the cooled crust. Warm apricot jam with a little water and brush over the fruit for gloss and flavor. Garnish with mint leaves.
