- 2 cups of diced chicken or rabbit (or your meat of choice)
- 1 cup of diced carrots
- 1 cup of peas
- 1 cup of potatoes, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 tablespoon of flour
- 2 cups of chicken or vegetable broth
- 1 teaspoon of thyme
- 1 teaspoon of salt
- ½ teaspoon of pepper
- 2 pre-made pie crusts (or homemade if preferred)
- 1 egg (for egg wash)
Instructions
- Prepare the filling: In a large pot, heat oil, then sauté diced chicken or rabbit, chopped onion, carrots, and garlic until meat is browned and vegetables are tender.
- Make the sauce: Sprinkle flour over the mixture, gradually add broth while stirring to avoid lumps. Add potatoes, peas, thyme, salt, and pepper; simmer until thickened.
- Prepare the crust: Roll out the pie crust and line the bottom of a pie dish. Pour the filling in, topping with another crust, crimp edges, and create slits for steam.
- Bake to perfection: Brush the top with beaten egg and bake in a preheated oven at 400°F (200°C) for 35-40 minutes or until golden brown.
Notes
- Store leftovers in an airtight container in the fridge for up to 3 days.
- For longer storage, freeze individual slices wrapped in plastic wrap and aluminum foil.
- Enhance the dish with a crisp salad or steamed greens.
