Instructions

- Cut in the butter: Add the cold, cubed butter into the flour mixture, using a pastry cutter or fingers to work it until the mixture resembles coarse crumbs.
- Add water: Gradually pour in ice-cold water, mixing gently until the dough starts to hold together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes.
- Prepare the berries: In a bowl, mix the wild berries with sugar, cornstarch, and lemon juice until coated.
- Let the mixture sit: Sit for 10 minutes to allow flavors to meld and juices to thicken.
- Preheat the oven: Set to 375°F (190°C).
- Roll out the crust: On a floured surface, roll the dough to fit your tart pan.
- Assemble and bake: Transfer dough, pour berry filling, and bake for 40-45 minutes until golden and bubbling.
