Instructions
- Preheat oven to 375°F (190°C). Grease a 9-inch square baking dish or cast-iron skillet.
- In a large bowl, whisk together flour, cornmeal, sugar, baking powder, and salt.
- In a separate bowl, beat the eggs, then add milk and melted butter, mixing well.
- Pour wet ingredients into dry and stir gently until just combined. Do not overmix.
- If desired, fold in cheese or bacon bits for extra flavor.
- Pour batter into prepared dish or skillet, smoothing the top with a spatula.
- Bake for 20-25 minutes until golden and a toothpick tests clean.
- Cool slightly before slicing; for crispy edges, bake until edges are caramelized.
