- 4 large russet potatoes, diced
- 1 lb beef sirloin or flank steak, sliced thinly
- 6 slices bacon, chopped
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- Fresh thyme or parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Pop the diced potatoes on a baking sheet, drizzled with olive oil, garlic powder, salt, and pepper. Roast for 30 minutes until crispy.
- While potatoes roast, cook bacon in a skillet until crispy. Drain excess fat.
- Cook beef slices in the bacon fat over medium heat until browned and cooked through, about 3-4 minutes each side.
Notes
- For extra flavor, add paprika or rosemary to the potatoes before roasting.
- Use a cast-iron skillet for an authentic presentation.
