Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Whisk together flour, cocoa powder, baking soda, and salt in a bowl.
- In a large bowl, beat softened butter and sugar until creamy. Add eggs one at a time, then vanilla.
- Gradually add dry ingredients, alternating with buttermilk, beginning and ending with dry ingredients.
- Spoon batter onto baking sheets to form 12-15 equal-sized rounds.
- Bake for 10-12 minutes until edges are set. Cool completely on wire racks.
- In a bowl, beat heavy cream until stiff peaks form.
- In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
- Gently fold whipped cream into cream cheese mixture. Add food coloring for joker theme.
- Fill piping bag with the filling and pipe onto flat sides of cooled cakes.
- Sandwich pairs together to complete the whimsical joker-inspired whoopie pies.
Notes
- Use gel food coloring for vibrant colors without altering consistency.
- Let the filled whoopie pies rest in the fridge for at least 1 hour to set the filling.
