- 1 tbsp freshly squeezed lime juice
- ¼ cup finely diced red onion
- 1 small jalapeño, seeded and minced
- ¼ cup chopped fresh cilantro
- 1 small tomato, diced (optional)
- ¼ tsp sea salt, or to taste
- 1 tbsp black sesame seeds (for ‘egg’ texture)
Instructions
- Cut avocados in half, remove pits, and carefully scoop out flesh (reserving halves for shaping).
- Mash reserved avocado flesh in a bowl with lime juice.
- Stir in red onion, jalapeño, cilantro, tomato (if using), and salt.
- Spoon mixture back into avocado halves, packing firmly.
- Press black sesame seeds onto the top to resemble dinosaur eggs.
- Chill for 10 minutes before serving, if desired.
Notes
- For extra ‘fossil’ effect, place a few crushed tortilla chips or pomegranate seeds under the avocados on the platter.
- Serve with tortilla chips or sliced French bread for dipping.
- Make immediately before serving to prevent browning; brush cut surfaces with citrus juice if prepping ahead.
