- 1 1/2 cups all-purpose flour
- 1 cup brown sugar
- 1/2 cup unsalted butter, softened
- 2 eggs
- 1/2 cup butterscotch chips
- 3/4 cup buttermilk
- 1 teaspoon vanilla extract

- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C) and line a cupcake tin with paper liners.
- In a bowl, mix flour, baking soda, and salt.
- In a separate bowl, cream butter and brown sugar, then add eggs one at a time.
- Mix in vanilla and buttermilk, then gradually add dry ingredients.
- Fold in butterscotch chips.
- Spoon batter into liners and bake for 20-25 minutes, until golden and a toothpick comes out clean.
- Let cupcakes cool before frosting.
Notes
- For a richer flavor, add a splash of rum extract to the frosting.
