Ingredients
Scale
- 2 cups heavy whipping cream, cold
- 1 (14 oz) can sweetened condensed milk
- 1 tsp pure peppermint extract (adjust to taste)
- 1/4 tsp green food coloring ( Optional)
- 3/4 cup mini chocolate chips
- 1/4 cup toasted coconut flakes (optional)
- Mint leaves for garnish
Instructions
- Line a standard 9×5-inch loaf pan with plastic wrap, leaving overhang on two sides for easy removal.
- In a large bowl, whip the cold heavy cream with an electric mixer until stiff peaks form.
- Gently fold in the sweetened condensed milk, peppermint extract, and food coloring (if using) until fully combined and uniformly pale green.
- folded in chocolate chips and toasted coconut (if using).
- Pour mixture into the prepared loaf pan, smoothing the top with a spatula.
- Cover with plastic wrap and freeze for at least 6 hours, or overnight.
- To serve, lift the loaf out using the plastic wrap overhang. Remove plastic wrap, slice with a warm knife, and garnish with mint leaves.
Notes
- For a stronger mint flavor, add an extra 1/4 tsp peppermint extract—but be careful not to overdo it, as too much can taste like toothpaste.
- Use high-quality chocolate chips for best texture; avoid melted chocolate to keep the loaf no-bake friendly.
- Allow to sit at room temperature for 5–7 minutes before slicing for cleaner cuts.
