- 2 cups of tri-color pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 bell pepper, diced
- 1 cup mozzarella balls
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olives, sliced
- 1/2 cup Italian dressing
- Salt and pepper to taste
Instructions
- Cook the tri-color pasta according to package instructions with a pinch of salt. Drain and let cool.
- Chop cherry tomatoes, cucumber, bell pepper, and red onion. Add them to a large mixing bowl along with chopped parsley and sliced olives.
- Once the pasta has cooled, add it to the mixing bowl with the veggies. Toss in mozzarella and olives, then drizzle Italian dressing over the mixture. Stir well to combine.
- Transfer the salad to a serving bowl and garnish with additional parsley if desired. Serve and enjoy your colorful creation!
