- 2 medium zucchinis
- 1 cup seasoned breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs
- Cooking spray or olive oil for baking
- Your favorite dipping sauce (ranch, marinara, or sriracha)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and dry the zucchinis, then slice them into long strips about 1/4 inch thick.
- In a large mixing bowl, combine seasoned breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and black pepper.
- In another bowl, whisk the eggs. Dip each zucchini strip into the egg mixture, then roll it in the breadcrumb mixture.
- Place the coated zucchini fries on a baking sheet sprayed with cooking spray.
- Bake in the preheated oven for 20-25 minutes or until golden brown and crispy, flipping halfway through.

- Store any leftovers in an airtight container for up to 3 days.
- To reheat, bake at 350°F (175°C) for 10 minutes to restore crunch.
