- Clean glass bottles with tight-fitting caps for storage
Instructions
- Peel and slice the fresh ginger root into thin slices.
- Combine ginger slices, sugar (or honey), and water in a large pot and bring to a boil.
- Reduce heat and simmer for 30 minutes to extract the ginger’s flavor.
- Strain the syrup into a clean container, discarding ginger pieces.
- Add freshly squeezed lemon or lime juice to the syrup for brightness.
- Allow the syrup to cool to room temperature.
- Pour the cooled syrup into sanitized bottles, leaving some space at the top.
- Add a pinch of active dry yeast to each bottle to activate fermentation.
- Seal bottles tightly and place in a dark, warm area for 24-48 hours to ferment and carbonate.
- Check pressure regularly by gently pressing the caps to avoid over-carbonation.
- Refrigerate the bottles to halt fermentation and preserve freshness.
