Ingredients

  • 3 lb beef chuck roast
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 2 tsp ground cloves
  • 1 tsp ground allspice
  • 1 tbsp freshly ground black pepper
  • 1 tsp smoked paprika
  • 1 tbsp brown sugar
  • 1/4 cup Dijon mustard
  • 2 tbsp honey
  • Fresh rosemary sprigs, for garnish

Instructions

  1. Preheat oven to 325°F (165°C). Pat beef dry and score surface lightly.
  2. Whisk olive oil, garlic, cloves, allspice, black pepper, paprika, and brown sugar into a thick paste. Rub generously over beef.
  3. Sear beef in a skillet over medium-high heat until browned on all sides.
  4. Place beef on a rack in a roasting pan. Insert meat thermometer.
  5. Roast 2–2.5 hours until internal temperature reaches 145°F (medium).
  6. Meanwhile, mix mustard and honey, and brush over beef during last 20 minutes of cooking.
  7. Rest 15 minutes before slicing. Garnish with rosemary.

Notes

  • For deeper flavor, marinate beef in spice paste overnight.
  • Let beef come to room temperature before roasting for even cooking.
