- 3 lb beef chuck roast
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 2 tsp ground cloves
- 1 tsp ground allspice
- 1 tbsp freshly ground black pepper
- 1 tsp smoked paprika
- 1 tbsp brown sugar
- 1/4 cup Dijon mustard
- 2 tbsp honey
- Fresh rosemary sprigs, for garnish
Instructions
- Preheat oven to 325°F (165°C). Pat beef dry and score surface lightly.
- Whisk olive oil, garlic, cloves, allspice, black pepper, paprika, and brown sugar into a thick paste. Rub generously over beef.
- Sear beef in a skillet over medium-high heat until browned on all sides.
- Place beef on a rack in a roasting pan. Insert meat thermometer.
- Roast 2–2.5 hours until internal temperature reaches 145°F (medium).
- Meanwhile, mix mustard and honey, and brush over beef during last 20 minutes of cooking.
- Rest 15 minutes before slicing. Garnish with rosemary.
Notes
- For deeper flavor, marinate beef in spice paste overnight.
- Let beef come to room temperature before roasting for even cooking.
- Resting is essential—don’t skip it!
