- 1 cup (225g) unsalted butter, softened
- ½ cup (100g) granulated sugar
- 1 large egg yolk
- 2 cups (250g) all-purpose flour
- ¼ tsp salt
- 10–12 large fresh spinach or kale leaves, washed and dried
- Edible gold dust (optional)
Instructions
- Preheat oven to 325°F (165°C). Line an 8×8-inch baking pan with parchment paper.
- In a bowl, cream butter and sugar until light and fluffy. Beat in egg yolk until fully incorporated.
- Sift in flour and salt, then fold gently with a spatula until just combined—do not overmix.
- Press dough evenly into prepared pan, pricking surface lightly with a fork.
- Bake for 25–28 minutes, or until edges are golden brown and center is set. Cool completely in pan.
- Once cooled, cut into 12 small squares. Gently wrap each square in one spinach or kale leaf, folding neatly.
- Sift edible gold dust over leaves for shimmer (optional). Serve chilled or at room temperature.
Notes
- For easier wrapping, lightly blanch leaves in boiling water for 15 seconds, then shock in ice water and pat dry.
- Storage: Keep wrapped in parchment in the fridge for up to 3 days, or freeze for up to 1 month.
- For a nuttier flavor, replace ¼ cup flour with finely ground almond flour.
