Ingredients

  • 2 cups sushi rice, cooked and seasoned with rice vinegar, sugar, and salt
  • 150g sashimi-grade tuna, thinly sliced
  • 100g sashimi-grade salmon, thinly sliced
  • 100g sashimi-grade yellowtail, thinly sliced
  • 1/2 cup pickled ginger, thinly sliced
  • 1/4 cup wasabi, optional
  • 2 tbsp toasted sesame seeds
  • 1/4 cup shredded nori strips
  • Few edible flowers (chrysanthemum, nasturtium)
  • Microgreens for garnish
  • 1 tbsp tamari or soy sauce (for serving)

Instructions

  1. Cook sushi rice and season while warm with rice vinegar, sugar, and salt. Let cool.
  2. Arrange seasoned rice in a deep bowl, smoothing top.
  3. Fan or layer fish slices artfully over rice in sections (tuna, salmon, yellowtail).
  4. Garnish with pickled ginger, sesame seeds, nori strips, edible flowers, and microgreens.
  5. Serve with tamari and wasabi on the side in tiny ‘acorn cups’ or demitasse spoons.

  • Ensure all fish is sashimi-grade and sourced from reputable suppliers.
  • For a non-raw option, substitute with seared tuna or cooked shrimp.
