Soft, spiced, and portable — these lembas bread bars are inspired by the Elven waybread from The Lord of the Rings. Made with wholesome ingredients like oats, honey, dates, and nuts, they’re naturally sweetened and perfect for hiking, picnics, or anytime nourishment.

  • Total Time: 40 minutes plus chilling
  • Yield: 12 bars

Ingredients

Scale
  • 1 ½ cups rolled oats (gluten-free if needed)
  • ½ cup almond flour
  • ½ cup chopped walnuts
  • ½ cup dried dates, pitted
  • ¼ cup dried cranberries
  • 2 tbsp chopped candied citrus peel (optional)
  • 1 tsp ground cinnamon
  • ½ tsp ground cardamom
  • ¼ tsp sea salt
  • â…“ cup honey (or maple syrup for vegan)
  • 1 large egg (or flax egg)
  • 1 tsp vanilla extract
  • 1 tbsp melted coconut oil
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a food processor, pulse oats until partially ground (like coarse flour). Add walnuts and pulse a few times until coarsely chopped.
  3. Add dates, cranberries, citrus peel (if using), cinnamon, cardamom, and salt. Pulse until finely chopped and sticky.
  4. In a small bowl, whisk together honey, egg (or flax egg), vanilla, and melted coconut oil.
  5. Transfer dry mixture to a bowl, pour wet ingredients over, and stir until well combined.
  6. Press mixture firmly into prepared pan. Bake for 22–25 minutes, until golden brown and set.
  7. Cool completely in pan, then chill for 30 minutes for cleaner slicing.
  8. Cut into 12 bars. Dust with powdered sugar if desired before serving.
