- 1 ½ cups rolled oats (gluten-free if needed)
- ½ cup almond flour
- ½ cup chopped walnuts
- ½ cup dried dates, pitted
- ¼ cup dried cranberries
- 2 tbsp chopped candied citrus peel (optional)
- 1 tsp ground cinnamon
- ½ tsp ground cardamom
- ¼ tsp sea salt
- â…“ cup honey (or maple syrup for vegan)
- 1 large egg (or flax egg)
- 1 tsp vanilla extract
- 1 tbsp melted coconut oil
- Optional: powdered sugar for dusting
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a food processor, pulse oats until partially ground (like coarse flour). Add walnuts and pulse a few times until coarsely chopped.
- Add dates, cranberries, citrus peel (if using), cinnamon, cardamom, and salt. Pulse until finely chopped and sticky.
- In a small bowl, whisk together honey, egg (or flax egg), vanilla, and melted coconut oil.
- Transfer dry mixture to a bowl, pour wet ingredients over, and stir until well combined.
- Press mixture firmly into prepared pan. Bake for 22–25 minutes, until golden brown and set.
- Cool completely in pan, then chill for 30 minutes for cleaner slicing.
- Cut into 12 bars. Dust with powdered sugar if desired before serving.
Notes
- Store in an airtight container in the fridge for up to 5 days, or freeze for up to 2 months.
- For travel, wrap individually in parchment or beeswax wrap and pack in a small tin or satchel (just like the Fellowship!).
- Can be made gluten-free by using certified GF oats.
