- 1 ½ cups oat flour
- ½ cup almond flour
- ½ cup packed dark brown sugar
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp salt
- 6 tbsp melted unsalted butter
- ½ cup chopped dates
- ¼ cup chopped walnuts
- 2 tbsp honey
- 1 large egg
- ½ tsp vanilla extract
- Pinch of saffron threads, soaked in 1 tbsp warm water
- powdered sugar, for dusting
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang.
- In a bowl, whisk oat flour, almond flour, brown sugar, cinnamon, nutmeg, and salt.
- In another bowl, mix melted butter, honey, egg, vanilla, and saffron infusion.
- Fold wet ingredients into dry until justcombined. Stir in dates and walnuts.
- Pour batter into prepared pan, spreading evenly.
- Bake 22–25 minutes, until golden and set.
- Cool completely in pan on a wire rack.
- Lift out using parchment, cut into 12 bars. Dust with powdered sugar before serving.
Notes
- For vegan version: Replace egg with 1 tbsp flaxseed meal + 3 tbsp water, and use maple syrup instead of honey.
- Store in an airtight container up to 5 days—or wrap individually in parchment and pack for travel, like the Elves would!
