Homemade lembas bread bars inspired by the elven waybread from Lord of the Rings—sweet, dense, and nourishing. Perfect for picnics, hikes, or a magical breakfast.

Ingredients

  • 1 ½ cups oat flour
  • ½ cup almond flour
  • ½ cup packed dark brown sugar
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • 6 tbsp melted unsalted butter
  • ½ cup chopped dates
  • ¼ cup chopped walnuts
  • 2 tbsp honey
  • 1 large egg
  • ½ tsp vanilla extract
  • Pinch of saffron threads, soaked in 1 tbsp warm water
  • powdered sugar, for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang.
  2. In a bowl, whisk oat flour, almond flour, brown sugar, cinnamon, nutmeg, and salt.
  3. In another bowl, mix melted butter, honey, egg, vanilla, and saffron infusion.
  4. Fold wet ingredients into dry until justcombined. Stir in dates and walnuts.
  5. Pour batter into prepared pan, spreading evenly.
  6. Bake 22–25 minutes, until golden and set.
  7. Cool completely in pan on a wire rack.
  8. Lift out using parchment, cut into 12 bars. Dust with powdered sugar before serving.

Notes

  • For vegan version: Replace egg with 1 tbsp flaxseed meal + 3 tbsp water, and use maple syrup instead of honey.
  • Store in an airtight container up to 5 days—or wrap individually in parchment and pack for travel, like the Elves would!
