- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup honey
- 1/2 cup packed brown sugar
- 1/4 cup melted butter
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup raisins or dried cranberries
- 1/4 cup chopped dried apricots
- 1/4 cup chopped walnuts (optional)
Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, whisk together flour, oats, cinnamon, baking soda, and salt.
- In a separate bowl, whisk honey, brown sugar, melted butter, egg, and vanilla until smooth.
- Stir dry ingredients into wet until just combined. Fold in dried fruit and nuts.
- Scoop 1.5 tbsp portions onto baking sheets, spacing 2 inches apart.
- Bake 12–14 minutes until golden and set. Cool 5 minutes on sheets before transferring to wire racks.
Notes
- For extra shimmer, dust with powdered sugar *after* cooling.
- Store in an airtight container for up to 5 days—or wrap individually for a gift inspired by the Elven way.
- Gluten-free: Swap AP flour for 1:1 GF blend and ensure oats are certified GF.
