  • Total Time: 28 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 1/2 cup (115g) unsalted butter
  • 6 oz (170g) dark chocolate (70%), chopped
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup (30g) all-purpose flour
  • 1/4 tsp salt
  • 1 tbsp Grand Marnier or orange liqueur (optional)
  • Edible gold dust or flakes for garnish
  • Coarse sea salt for finishing
  • Fresh mint leaves for garnish

Instructions

  1. Preheat oven to 425°F (220°C). Grease and flour four 6-oz ramekins.
  2. Melt butter and chocolate together in a microwave-safe bowl in 30-second intervals, stirring until smooth. Let cool slightly.
  3. Whisk sugar, eggs, and egg yolks in a large bowl until pale and slightly thickened—about 3 minutes.
  4. Stir in chocolate mixture, then fold in flour and salt until just combined. Addliqueur if using.
  5. Divide batter evenly among ramekins. Place on a baking sheet.
  6. Bake 12–13 minutes until edges are firm but centers are still soft.
  7. Let cool 1–2 minutes, then invert onto plates.
  8. Garnish with gold flakes, sea salt, and mint before serving.

Notes

  • For extra fantasy flair, pipe blackberry coulis around the base to resemble lava rivers.
  • Do not overbake—centers should jiggle slightly when shaken.
  • Make ahead: Prepare batter up to 3 hours ahead, covered, and refrigerated. Add 1–2 minutes to bake time.
