- 6 large eggs
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon white vinegar
- Salt and freshly ground black pepper, to taste
- Paprika, for garnish
- Chopped chives, for garnish
Instructions
- Place eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat.
- Once boiling, remove from heat, cover, and let eggs sit for 10 minutes.
- Transfer eggs to ice water and cool completely, then peel and halve lengthwise.
- Remove yolks and transfer to a mixing bowl.
- Add mayonnaise, Dijon mustard, white vinegar, salt, and pepper to the yolks. Mix until smooth.
- Spoon or pipe the yolk mixture back into the egg whites.
- Sprinkle with paprika and chopped chives before serving.
Notes
- For extra flavor, add a dash of hot sauce or a pinch of curry powder to the yolk mixture.
