- 6 large eggs
- 3 tbspMayonnaise
- 1 tspDijon mustard
- 1 tspWorcestershire sauce
- ½ tspSmoked paprika, divided
- 1 tbspFresh lemon juice
- 1 tspHorseradish, fresh or prepared
- 1 tspCelery seed, finely ground
- S alt to taste
- 1 tbspBloody Mary mix (optional: with a splash of vodka, reduced gently)
- Garnish: 6 picholine olives, 2 tsp Fresh dill, paprika for dusting
Instructions
- Place eggs in a saucepan, cover with cold water by 1 inch. Bring to a boil, cover, remove from heat, and let stand for 12 minutes.
- Transfer eggs to ice water bath, cool completely, peel, and slice in half lengthwise. Carefully remove yolks and place in a bowl.
- mashed yolks with a fork. Add mayonnaise, Dijon mustard, Worcestershire, horseradish, ½ tsp smoked paprika, lemon juice, celery seed, and salt. Stir until smooth.
- Stir in reduced Bloody Mary mix (if using) for a bold kick and color.
- Spoon or pipe yolk mixture back into the egg whites.
- Drizzle with remaining reduced Bloody Mary reduction (optional). Sprinkle with remaining paprika, top with olives and dill.
- Chill 30 minutes before serving. Best served fresh.
Notes
- For an authentic Mad Men flair, serve in a vintage silver egg tray with cocktail napkins.
- The Bloody Mary reduction: Simmer ¼ cup Bloody Mary mix with dash of smoked salt until reduced to 1 tbsp. Cool before using.
- Can be made vegan by using tofu-based filling, but traditional version is preferred for texture.
