Instructions
- Preheat your oven to 350°F (175°C) and prepare ramekins by greasing with butter and dusting with granulated sugar.
- In a medium saucepan, whisk together flour and sugar, then add egg yolks, milk, and vanilla. Cook over medium heat until thickened.
- Whip egg whites with a pinch of salt until stiff peaks form, then gently fold into the batter.
- Spoon the mixture into prepared ramekins, filling them three-quarters full, and smooth the tops.
- Bake for 20-25 minutes until puffed and golden brown, then dust with powdered sugar and serve immediately.
Notes
- Best enjoyed fresh as soufflés tend to deflate after cooling.
- If leftovers, store in an airtight container in the refrigerator for up to 1 day.
- Reheat gently in the oven to regain some fluffiness.
