Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  2. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy. Add the egg and vanilla, mixing well.
  3. Gradually incorporate the dry mixture until just combined.
  4. Drop rounded tablespoons of the batter onto lined baking sheets, leaving space between each.
  5. Bake for 10-12 minutes or until edges are set. Allow to cool completely.
  6. In the meantime, prepare the cream filling by beating together the butter, powdered sugar, heavy cream, and vanilla until smooth.
  7. Once the cookies are cool, fill them with the cream to create the Whoopie Pies.
