- For the Chocolate Cookies:
- 1 ½ cups all-purpose flour

- ½ teaspoon salt
- 1/2 cup unsalted butter, softened

- 1 teaspoon vanilla extract
- For the Cream Filling:
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 2 tablespoons heavy cream
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). In a bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
- In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy. Add the egg and vanilla, mixing well.
- Gradually incorporate the dry mixture until just combined.
- Drop rounded tablespoons of the batter onto lined baking sheets, leaving space between each.
- Bake for 10-12 minutes or until edges are set. Allow to cool completely.
- In the meantime, prepare the cream filling by beating together the butter, powdered sugar, heavy cream, and vanilla until smooth.
- Once the cookies are cool, fill them with the cream to create the Whoopie Pies.
