- 1 cup cherry tomatoes
- 1 bell pepper, diced (any color)
- 1 zucchini, sliced
- 1 cup mushrooms, halved
- 1 red onion, cut into chunks
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Wooden or metal skewers
Instructions
- Wash and cut the vegetables.
- In a large bowl, combine vegetables with olive oil, garlic powder, smoked paprika, salt, and pepper. Toss well.
- Let the vegetables marinate for at least 15 minutes.
- Thread the marinated vegetables onto skewers, alternating colors and textures.
- Preheat the grill over medium heat.
- Place skewers on the grill and cook each side for 5-7 minutes, turning occasionally.
- Remove the skewers from the grill and serve warm, garnished as desired.
