- 2 cups of shelled edamame (fresh or frozen)
- 1 cup of cherry tomatoes, halved
- 1/2 cup of diced red bell peppers
- 1/2 cup of shredded carrots
- 1/4 cup of chopped fresh cilantro
- 1/4 cup of sliced green onions
- 3 tablespoons of sesame oil
- 2 tablespoons of soy sauce (preferably low-sodium)
- 1 tablespoon of rice vinegar
- 1 teaspoon of honey or agave syrup
- 1 tablespoon of toasted sesame seeds
- Optional: 1 avocado, sliced
Instructions
- Bring a pot of water to a boil, add the shelled edamame, and cook for about 5 minutes until tender. Drain and rinse with cold water to cool.
- Prepare the cherry tomatoes, red bell peppers, and carrots by dicing into bite-sized pieces.
- In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, and honey to create the dressing.
- In a large bowl, combine the cooled edamame, cherry tomatoes, red bell peppers, shredded carrots, chopped cilantro, and green onions. Pour the dressing over and toss gently to coat evenly.
- Sprinkle toasted sesame seeds on top. For added creaminess, add sliced avocado if desired. Serve immediately or chill for 30 minutes for enhanced flavor.
Notes
- Store leftovers in an airtight container in the refrigerator and consume within 24 hours for optimal freshness.
- To prevent sogginess, store the dressing separately and add just before serving.
